Apple and Beetroot Smoothie

Throughout eastern Europe, beetroot has long been regarded as a traditional vitality-boosting vegetable in folklore and conventional medicine alike.

Historically, its colour associated it with being good for the blood – an observation that has been proved accurate by modern science. Combined with the live bacteria in the yoghurt, which gives a powerful boost to the natural immune system, this smoothie is the ultimate vitality drink.

 

Vitality Juice Drink - Apple and Beetroot Smoothie Serves 1-2

3 apples

2 medium cooked beetroot

125ml or 4fl oz plain live yoghurt

 

1. Core the apples and quarter them and the beetroot.

2. Put through a juicer.

3. Stir in the yoghurt and serve.

 

Vital statistics

Large amounts of folic acid reduce the levels of homocysteine in the circulating blood, and this action helps greatly to protect against heart disease. Iron, potassium, calcium, betacarotene, and some vitamins are also provided by the beetroot, all of which help boost vitality levels. The apple juice contains vitamin C and ellagic acid, both immune-boosters, and the yoghurt provides a quarter of a day’s calcium requirements as well as the live bacteria that are so important for effective digestion, the synthesis of B vitamins, and a strong immune system.
