Cucumber and Strawberry Frappe
Strawberries and sunshine go together like bread and jam.
When mixed with ice-cold yoghurt and cooling cucumber, they help create this wonderful summer drink. Freshly ground black pepper helps bring out the succulent flavour of strawberries – don’t knock it until you’ve tried it.
1 large cucumber
6 large strawberries
About 300ml or 10fl oz plain live yoghurt
Freshly ground black pepper
1. Peel, de-seed, and cube the cucumber.
2. Wash and hull the strawberries.
3. Put both fruits into aor food processor with the yoghurt.
4. Whizz until smooth.
5. Add the pepper to taste and serve.
Betacarotene, vitamin C, and specific phytochemicals in the strawberries give this drink valuable anti-arthritic properties, while the high calcium content of the yoghurt helps all bone and joint conditions.
It’s important to use live yoghurt, as this is the only type that contains active probiotic bacteria. These friendly bugs help to improve digestion, synthesize some of the B vitamins, and boost your natural immunity.
