Honeyed Iced Tea

The complex flavours of this unusual iced tea make it the perfect refreshing and revitalizing drink on a hot summer’s day.

It does sound like a lot of trouble, but during a hot spell it’s worth making double the quantity and putting it in a covered jug in the refrigerator, where it will easily keep for two or three days.

It’s not the nutrients that are important here; the essential oils in the spices are what provide a vitality boost.

 

 

Serves 4

About 600ml or 20fl oz water

5 Earl Grey tea bags

4 cinnamon sticks

4 cardamom pods

1 tsp black peppercorns

1 tbsp coriander seeds

1 tbsp runny honey

 

1. Honeyed Iced Tea - bergamot Boil the water.

2. Add the tea bags, leave for ten minutes, then remove.

3. Break the cinnamon sticks into roughly 2.5cm (one-inch) pieces.

4. Crush the cardamom pods, peppercorns, and coriander seeds.

5. Put the tea into a large, heatproof bowl, add the spices, and leave for at least four hours.

6. Strain into a saucepan.

7. Reheat and stir in the honey.

8. Leave to cool before serving.

 

Vital statistics

Tea on its own is a valuable and protective antioxidant, and this is enhanced by the addition of the bergamot oil that is used to make Earl Grey. Cinnamon, cardamom, and coriander are all energizing immune-boosting, and stimulating spices, and peppercorns help to stimulate the circulation. Just what you need to boost your flagging spirits on a hot, humid, and tiring afternoon.
