How to use Super Juices

‘But why bother?’ you ask. ‘There’s all that peeling and chopping and yet another machine (the juicer) to clean.’ There are several reasons. The first is that juicing is the fool-proof way of adding wonderful life-giving, life-enhancing and life-protecting vitamins, minerals and natural food chemicals to your diet. Sure, you could take pills, but they contain only the nutrients we know about in artificial form. On the other hand, the nutrients in fresh juice are more easily absorbed by the body. What’s more, it contains trace elements, vitamins and minerals that scientists are only just beginning to discover. Buy a juicer and try these recipes daily for a month; at the end of it, you’ll look better, feel better and you’ll be better.

‘Can’t I just buy ready-made juices at the supermarket?’ Not if you want to reap the real benefits of juicing. There’s no comparison between fresh and commercial juices; even ‘freshly squeezed’ ones have been in the bottle for several days, losing vitamins. Processed varieties are reconstituted concentrates that are vitamin-deficient. Fruit ‘drinks’ are often 90 per cent water, ten per cent juice, sugar, sweeteners and a host of chemicals. Is that really what you want inside your body? Your own freshly prepared juices are guaranteed to be free of additives, many of which cause asthma, eczema and other allergic reactions. Your juices will boost your body’s energy, vitality and natural immunity. Use them as pick-me-ups when you’re low, mixed modestly with alcohol at parties, or made into shakes, smoothies and crushes. You can even use them to cleanse and detox your system, giving your body a spring clean. Pioneers such as Bircher Benner, the inventor of muesli, and Stanley Lief, founder of Champneys health spa, were advocates of juicing. Gloria Swanson, was almost 80 when we first met, she was bounding with energy – still a tireless, vivacious and stunningly beautiful woman. Some recipes in this Superjuice section are obvious, some are unusual and others are rather strange, but they’re all here for a purpose. Don’t dismiss them just because they seem ‘alien’ at first sight! You won’t find meaningless figures here. Instead, simple descriptions show the vitamins and minerals contained in each recipe, which makes one eight-ounce glass of juice:

Other than where specifically stated, all relative proportions listed in recipes are approximate. In addition, quantities of ingredients will vary according to their size, variety and ripeness; some apples are bigger than others, after all! With a bit of practice, you’ll soon become expert at judging how many carrots or apples yield eight ounces of juice.
