Blackberry Bellini

What could be more cooling than this deliciously healthy and refreshing drink? Most people enjoy a glass of Bucks Fizz, but this “Hedgerow Fizz” is quite different.

If picking your own blackberries, make sure they’re really ripe; otherwise they can be sour and bitter. If they’re wild, avoid those growing by the roadside as they will be contaminated with exhaust fumes.

The sharp, clean taste of mint is especially refreshing – even more so combined with the heady bubbles of Champagne or sparkling wine.


juicing recipe 'blackberry bellini' Serves 1-2

225g or 8oz fresh or frozen blackberries

Half a bottle of chilled, medium-sweet Champagne or sparkling wine

Two sprigs of mint


1. Defrost the fruit, if necessary. Wash it if fresh.

2. Put into a blender and whizz until smooth.

3. Push through a sieve to remove the pips.

4. Pour the Champagne or wine into chilled glasses.

5. Top with the blackberry juice and garnish with the mint.

Not only are blackberries an excellent source of vitamin C, they also provide substantial amounts of vitamin E, so this drink has health benefits as well. Like all the very dark-coloured fruits, blackberries are a rich source of protective antioxidants, and these properties are further enhanced by the cardio protective benefits of the alcohol.
