Mascarpone and Mint Smoothie Recipe Serves 2

2 large sprigs of mint

250ml or 9fl oz mascarpone cheese

150ml or 5fl oz semi-skimmed milk

 

1. Strip the leaves off the mint, leaving two top sprigs whole.

2. Put the rest of the ingredients into a blender and whizz until smooth.

3. Serve with the reserved mint sprigs on top.
