Popeye’s Secret Smoothie

Popeye’s belief that spinach is a great source of muscle-building iron is, unfortunately, not true. There is lots of iron in spinach, but your body can extract hardly any of it due to the oxalic acid that is also present in spinach leaves.

However, this wonderful vegetable is a very rich source of other nutrients which are especially good for the eyes. Mixed here with diuretic parsley, cleansing melon, and antibacterial sage, it makes a cleansing and healing drink.

 

 

Popeye's Spinach Smoothie Secret Recipe Serves 1-2

1 honeydew melon

1 handful baby spinach leaves

4 sage leaves

2 stalks flat-leaf parsley

 

1. Peel, de-seed, and cube the melon.

2. Wash the spinach, sage, and parsley.

3. Put the melon, spinach, and sage leaves into a blender or food processor and whizz until smooth.

4. Tear the leaves off the parsley stalks, chop them finely, and scatter over the juice.

 

Vital statistics

Melon provides folic acid, potassium, and a little vitamin A, C, and B, but it is renowned in folklore as a cleansing fruit. The cancer-fighting phytochemicals, large amounts of folic acid, and the eye-protective carotenoids lutein and xeaxanthine all come from spinach, while sage provides plant hormones and the powerfully antiseptic thujone.
