‘Pumping Iron’ Superjuice Recipe

Here’s a power-pumping iron tonic in a glass for those dull, grey days when you just can’t seem to charge up the batteries. It’s all too easy to dismiss the cucumber as nothing more than water. While its nutritional content is very low, it is nonetheless regarded as an important healing vegetable in natural medicine – which explains why it appears in lots more recipes. Here, the cucumber’s cool, refreshing flavour contrasts superbly with the astringency of beetroot, spinach and watercress.

apples 2, unpeeled, uncored and quartered

beetroot 1 small, unpeeled, with leaves

cucumber 1 medium

Spinach 1 handful of leaves

watercress 1 handful

Vital Statistics:

Super-rich in iron, vitamin C and folic acid. Rich in beta-Carotene and other carotenoids. The vitamin c in this Superjuice makes the iron it contains all the more easily absorbed by the body, while its beta-carotene and other carotenoids protect against cancers. All this, plus its instant supply of natural sugars, makes Pumping Iron the perfect juice for serious exercisers, body-builders, vegetarians and women planning pregnancy.
