Spiced Coconut

Coconut milk is easily available even in your local supermarket, so there’s no excuse for not trying this exotic, spicy way to protect yourself from all sorts of infections. The heady scents of coconut and cloves are redolent of tropical islands, blue seas, and sunshine, and thinking of that is enough to make you feel better on its own.

This takes just seconds to prepare, but do take the time to savour the taste and soak up the benefits.

Serves 2-3

300ml or 10fl oz coconut milk

150ml or 5fl oz full-fat milk

1 tbsp runny honey

2 tsp ground cloves, plus a little to serve

 

1. Put the coconut milk, ordinary milk, honey, and cloves in a blender and whizz well.

2. Serve with an extra pinch of ground cloves on each glass.

 

Vital statistics

Plenty of calcium, magnesium, potassium, protein, and modest amounts of vitamins B and D come from the coconut and whole milk. The cloves provide aromatic essential oils that are both healing and antibacterial. Even the honey has protective benefits, as it contains traces of natural antibiotics produced by the bees – which is why honey never goes mouldy.
