Watermelon and Coconut Chill-Out

Here’s another juice that provides nutrients you might be missing if you’re following a restrictive slimming plan.

Coconut milk has unique flavours and aromas and immediately conjures up images of blue skies, even bluer seas, and palm trees.

Just the sight of a slice of watermelon is enough to make you think of summer. Add the ginger for a final taste of the tropical Spice Islands.


watermelon-and-coconut-chill-out Serves 2-4

900g or 2lb watermelon

125ml or 4fl oz coconut milk

2 pinches ground ginger


1. Peel, de-seed and cube the watermelon.

2. Put into a blender with the coconut milk.

3. Whizz until smooth.

4. Serve with the pinches of ground ginger on top.

Though watermelon is not renowned for its nutrient content, it’s a traditional cooling food that does contain potassium, folic acid, and small amounts of other vitamins. Coconut milk, however, provides calcium, magnesium, and potassium – all essential minerals. The ginger is a great circulatory stimulant. This juice will stimulate your metabolism and help speed up the weight-loss process.
